GF WF DF choc covered cherry coconut slices (with photo) |

Easy chocolate covered cherry coconut slices
Ingredients:
200g of GF Chocolate or Carob
50g of soft margarine (Stork)
75g of Caster/superfine sugar
200g packet of desiccated coconut
100g carton of glace cherries
1 egg
Method:
Pre-heat oven to 350F/GasMark 4
Line a baking tray about 8 x 12 approx with heavy tin foil or non-stick baking sheet (Magic cooking sheet)

Melt the chocolate very gently in a bowl over a pot of boiling water.
Wash glucose syrup off cherries *
*( not because its harmful just makes it easier to handle and chop)
Cut cherries in half and then each half in 4.

Pour the melted chocolate into the lined tray spread evenly and refrigerate until set.

Cream the margarine and sugar together, add the egg and mix well,
add the desiccated coconut and chopped cherries, mix until well combined.
Spread the mixture over the set chocolate to form an even layer.

Place into pre-heated oven and bake for 25 30 mins or until coconut is golden in colour.

Cool in the tin and refrigerate until chocolate sets again.
Turn out, remove foil / non-stick liner.
Cut into fingers, store in an airtight container, and insert greaseproof paper between layers.
