GF WF DF Lemon polenta and ground almond cake (with photo)

INGREDIENTS:

180g Stork Margarine (the one in the tub for baking)
250g Caster Sugar/superfine
6 eggs separated
200g Ground Almonds/meal
125g Polenta * (awaiting verification of GF Brand)

Rind and juice of 2 large lemons
Icing/confectioners sugar to dust

METHOD:

Grease and line a 9” round cake tin

Preheat the oven –350F/GasMark 4

Beat the margarine and sugar until pale and creamy.
Approximately 3 minutes.
Add the egg yolks, one at a time, beating well after each addition.

Then add the ground almonds, Polenta, lemon rind and juice.
Mix well using a wooden spoon.
.
Beat the egg whites until they forms stiff peaks.
.
Incorporate the egg whites into the mixture, using a metal spoon
Use a cut and fold action (figure of eight)
.
Bake for 50 mins or until a skewer inserted in the centre comes out clean.
.
Remove from the oven and let it cool on a rack.
When cool dust with icing/confectioners sugar.

Hey Dave, these look incredible!

You must be surrounded by a pack of really overweight but very happy friends, from all the nice cake you make. Or is it a solitary pleasure?

It's mostly a solitary pleasure, I don't have many people who will even try my cakes !! Crying or Very sad

I have a woman next door who baked all her life
and even worked with kids years ago that had CD
and had tasted GF bread all those years ago, and said
"that 'disgusting, horrible, gritty stuff' (her words, not mine) how could you possibly eat that ????"
.
I find it hard to get anybody to even try the stuff I bake,
it can be a bit disheartening at times.
.
I wonder will we ever break that pre-concieved idea of Gluten Free Foods Rolling Eyes
and get to where Vegeterian Food is ??
can be eaten by everybody without a problem, but has been specially created for a particular diet !!.
.
I bet if I did a taste session somewhere,
without saying anything about Coeliac Disease or Gluten Free.
.
99.99% couldn't tell the difference
(I'll even take bets on it) ha! ha!. Smile

Hey Daveyboy

I made your cake twice last week and it was fantastic, thanks again, I must say ground almonds are pretty expensive though arent they?
Where do you get yours? I was also thinking of substituting oranges for the lemons and adding chocolate, what do you think?

Yes Ground Almonds are very expensive with a BIG difference from the dearest to the cheapest.
.
Dearest is Shamrock @ about 5.50 for 200g
Dunnes Stores own brand about 4.30 for 200g.
Goldcrop about 3.20 for 200g
.
If you intend using more of my recipes (you'll notice I use Almonds a lot)
Buying in Bulk is probably the cheapest way to go (1 KG or 5 KG prepacked)
check brand websites for criteria in safe food practices (avoiding CC etc)
.
P.S. Orange and Chocolate is always a good combination.

Hi ya,

If you can't buy bulk almonds. Tesco has lowered its price for 200g almonds to €2.69, which is quite good even compared to some wholesale prices.

Hi Dan

I noticed that Tesco have lowered their price for ground almonds Very Happy I stocked up, I love home made bakewell tart, but find the almonds very expensive, but then i ease my conscience by telling myself, thats almonds are good for me Very Happy

You don't have to pretend anymore,
not only do my recipes use

naturally GF ingredients
BUT
some of the ingredients are
GOOD for you !!.

Hi Joanne,

I agree with Daveyboy Almonds are one of the best foods around. What a lot of people don't know is that they are a great source of calcium which is great if you are lactose/ dairy intolerant.

Have just seen 200g ground almonds in my local LIDL reduced from €1.99 to 99 cent a bag. Hopefully they'll be on the list when LIDL submits their updated list in line with the new Codex Standard.
