GF WF SOFT WHITE BREAD ROLLS

Dry Ingredients:
.
120g rice flour (Doves Farm)
70g corn flour/starch *
60g tapioca flour/starch (Allergycare)
40g milk powder (Dawn)
1 Tbls sugar
½ tsp xanthan gum
¾ tsp salt
1¼ tsp or ½ sachet dry yeast

* B&P No longer considered GF due to cross-contamination.

Wet Ingredients:
.
1 Tbls of Stork (soft) Margarine
250ml of warm water
1/2 tsp of lemon juice
1 Egg

Method:
.
Place all the dry ingredients into a medium bowl, sift ingredients to mix, set aside.
.
Dissolve soft margarine in warm water, add lemon juice and mix.
.
Add wet mixture to dry ingredients while beating with a hand held electric mixer.
.
Add the egg, and beat for about 2 mins on high speed.
.
Heat oven and TURN OFF.

Grease and lightly dust with rice flour 1 Yorkshire pudding Type Tray, fill batter mix evenly into the 6 recesses.

Place tray in warmed oven for 40 mins to allow dough to ‘Prove’ (rise)
.
Turn oven on to 350F/GasMark 4 and bake for 35 mins
10 mins before end brush tops with some melted butter and finish baking.

These Soft White Buns are excellent for sandwiches

I was treated to a sample of these by the man himself. They were just delicious.
It's well worth making these as they are much nicer than anything you find on the gf food shelves.

I can't comment on the baking (yet) but the recipe seems very straightforward and the only "work" is mixing everything together.

Do give t a try!
