GF WF Meringue Cake |

This Recipe has been converted to GF status and is taken from the recipe site Eat, Drink or Die.

Ingredients
100g icing sugar
60g GF plain flour (Doves Farm)
25g GF cocoa
½ tsp. cream of tartar
5 egg whites
½ tsp. vanilla essence
Method:
Beat egg whites until they are stiff.
Gradually add sugar which has been sifted with GF cocoa, GF flour and cream of tartar,
Mix in a cut and fold motion (figure of '8')
Add the vanilla essence.
Mix just enough to obtain a uniform blend of ingredients.
Pour into 2 well greased 8” sandwich tins.
Bake in moderate oven 350ºF/GasMark4 about 35 minutes.
Remove from oven.
When cool put layers together and spread outside with Buttercream. (flavour of your choice)
Sprinkle with finely chopped nuts or coconut
