GF INDIVIDUAL APPLE SPONGE PUDDINGS (WITH ACTUAL PHOTO) |

Filling Ingredients:
2 medium cooking apples,
50g caster sugar,
2 Tblsp of water,
40g of flaked almonds.
Method:
Peel, core and slice apples and place in a saucepan add sugar and water and bring the boil
allow to simmer over lowest heat until apples are soft enough to puree.
Once pureed allow to cool and add flaked almonds and stir.
Sponge ingredients:
25g corn flour *
* (Brown & Polson no longer considered gf due to cross-contamination)
25g tapioca flour (Allergycare)
55g ground rice (Gem pack)
115g ground almonds (Gem Pack)
45g caster sugar
90g soft butter or for DF use margarine (Stork)
2 medium eggs
!/2 tsp of gf baking powder * make your own 2 parts cream of tartar 1 part bread soda*
1/4 tsp almond essence
4 -5 Tblsp of milk (for DF use Soy Milk)
Method:
Mix all dry ingredients together (except the sugar), cream the butter and sugar till white and fluffy
add 1 egg at a time with a little flour (helps stop curdling)
add almond essence and beat well
fold in the remaining flour and add 1 Tblsp of milk at a time until the mix
is of a soft dropping consistency (not pouring)
Using deep sided individual foil cases place a Tblsp of mix in the bottom of the tray
Add 1 Large Tblsp of apple puree and then fill to the top with more mix.
Repeat until all ingredients are used. (sufficient for 8 individual servings)
Pre-heat oven to 300F/GasMark4 bake for 30 - 40 mins
Can be eaten hot or cold. Serve with custard or whipped cream.

it's nice to know that people actually take notice of the recipes.
Everything i have posted is fantastic
Try the fruit and nut cup cakes they are out of this world.
I presume you like to bake.

You're doing a blinder...keep up the good work. And thanks for the advice about flours..Rathmines isn't too far away. i have been busy but will be trying the fruit and nut and apple sponges this weekend.

Go to the Food Query section and check out the society's reply to my request for a list of approved Gluten Free Natural flours there's a lot of Society approved flours available (may have to order them. Guarantee if you make the sponges(easiest) and the fruit and nut cup cakes (a little more time consuming) you won't be dissappointed. David

I think you are trying to give me a swelled head.
Glad you enjoyed them, i usually heat in microwave for about 20 secs
(thats after you remove the foil, and if you tear it in a circular fashion it wont pull the sponges apart)
Then microwave a small pot of ambrosia custard and pour it over the top that's what i call sheer Heaven.

Hi Dave,
You have certainly done your homework on this subject.My mother, who is 72 and being a coeliac sufferer for over 10 years is an ardent cook.Every time she cracks the secret for good bread or sponge something changes in the flour. I am going to get her to try these recipies as although not a coeliac sufferer myself I do eat a lot of her cooking.

Hi "Marya", Hope your mum enjoys the bread and individual apple sponges,
she can make 1 large apple sponge by just doing the same ie: covering the base with sponge mix
spooning apple mix (try to keep away from the sides) fill with the rest of mix.
Bake as per recipe + 5 mins or until it's a nice golden colour.
The fruit and nut cup cakes are very tasty, as is the savoury rice (preparation just takes longer)

Hi anne,
Glad you enjoyed the sponges, a lot of the recipes are adapted to make them 'Coeliac' friendly ie: 'GF'
but there are a few origionals in there as well.
Thought you were having lemon cheesecake? but maybe your saving that for another time!

Sorry to hear you are allergic to apples, but the fruit can be replaced by
whatever you can tolerate.
I just zap mine in the microwave for 20 secs on full power and
pour over hot custard, Mmmmm sheer heaven.
