PIZZA CRUST LIKE YOU WOULDN'T BELIEVE ! !

It's not difficult to make your own pizza crust it looks good and tastes good.

For people who buy their pizza bases from the supermarket, health shop or chemist if you don't try this you will never know what real pizza crust should taste like?

The stuff that is commercially available is Gluten Free, Dairy Free, Egg Free, Lactose Free, Sulphide free etc in other words it tastes like 'OLD CARDBOARD BOXES' !




PIZZA CRUST


INGREDIENTS:
1 sachet of dried yeast 7g or 2.25 tsp (mc Doughalls or Allinsons)
100g of brown rice flour (Doves Farm)
70g of tapioca flour (Allergycare)
2 Tbls of dried milk powder (Dawn/Marvel)
2 tsp of xanthan gum
1/2 tsp of salt
1 tsp of dried gelatin powder
1 Tbls of italian herbs (McCormack/Schwartz no harmful ingredients)
160ml of warm water (105 deg) (Think baby's bottle on back of wrist)
1/2 tsp of caster sugar/superfine
1 tsp of olive oil
1 tsp of apple cider/red wine vinegar


METHOD:

Pre-heat oven to 425F/GasMark 7

In a medium bowl using regular beaters on an electric hand held mixer
blend flours, yeast, dry milk powder, xanthan gum, salt, gelatin and herb seasoning on a low speed.

Add warm water, sugar, olive oil and vinegar, beat for 3 mins
(if mixer bounces around the bowl the dough is too stiff, add water 1 Tbls at a time
until dough does not resist beaters)

The dough will resemble soft bread dough.
(you may also mix in a bread machine on a dough setting)

Grease a 12" pizza pan lightly ( apply oil to kitchen paper and rub over the surface).
Not the tray with holes that's only for re-heating Pizza
put dough mix in centre of pizza pan sprinkle liberally with some rice flour (Doves Farm)
using a floured glass (hi-ball tumbler is best sides are parrallel)
roll dough out towards the edges of tin evenly

Make edges thicker to retain toppings
( I just squeezed between my thumb and forefinger all the way around the circumference)

Bake in oven for 10 mins, remove spread with the homemade pizza sauce
and grated mozzerella cheese, add your favourite toppings and finish with grated cheddar cheese

Return to oven for a further 20 -25 mins or until the cheese is slightly browned

Sufficient dough for 1 good 12" pizza

Star rating: For pizza sauce and this crust (5 Star)

Hi Derek,
Glad you liked the Pizza Crust, next time try it with the Pizza Sauce recipe.
Tin/jar tomato type sauces are ok! but the Homemade Sauce makes a big difference.

If the Pizza Crust blew you away! just wait till the next release of recipes
we'll have to put an all points bulletin out for you !!!!!!!!

Are you serious? You're a culinary genius Daveyboy! Are you a food scientist by day? I've had some gluten free wraps from
Sainsbury's in the UK but have'nt been able to find any at home. I miss making mexican at home like you would'nt believe.
Oh I also made one of your bread recipes, I think it was the 'crusty bread' one that turned out really really nice, thanks again.

Hi Nellie, I havent tried this recipe with Trytamil, My mother has attempted Pizza bases with trytamil before and they have a tendency to turn out quite
cake-like, just like the bread, Theres something about the rice flour/tapioca flour mix that seems to really really work. I used 'The Health Store' branded brown rice flour and 'Allergycare' Tapioca Flour, I bought them in Health matters on grafton street and nourish on exchequer street. I got the red wine vinegar in Dunnes. I did'nt have dried gelatin powder at the time, so I just doubled up the Xanthan Gum (which you can get in health matters). Its a tad bit more expensive buying these flours over trytamil but the difference in quality is amazing, as im sure anyone who's used Daveyboy's recipes can attest. I'm going to have a shop around to see where you can get the flours cheapest and in larger quanities, I'll report back.

You're a star! Its just the thought of buying a million different flours puts me off but if you say its worth it in the end I'll definitely go with it, you might let me know the things you try and I'll take your word for it!!!

Yeah no problem, although I should have said 'grafton street and exchequer street' in Dublin, I'm so dublin-centric.
Have a look at davey-boys recipe for 'crusty bread', it really good, but make sure you buy all the wierd ingredients such as 'xanthan gum' and
'dried milk powder' [smells awesome] as they make quite the difference.

I know this is going to sound like I'm blowing my own trumpet, but
.
I gave a sample of the Crusty Basket Loaf for testing
by the lecturers of the National Bakery College Kevin St.
.
The word I got back is You'll be delighted to hear the Lecturer
thought your bread was VERY GOOD and may use your recipe
in one of the lectures!!!!

Hi Davey,

I made this Pizza three times since the weekend, its absolutely gorgeous I've another one in the oven now Im gonna be all pizza'd out but its worth all the ingredients searching!

Hi Nellie,
Not everything can be made using 'Trytamil Flour', when I was diagnosed in 2005 I tried using Trytamil
and found it very dry and gritty, even the fruit cake needed butter on it before you could eat it.
.
Anyway I reacted badly to Codex Wheat Starch, hence baking from scratch using only naturally GF ingredients
or as you would say 'all that different stuff', well if you're hooked on the Pizza maybe you'll try other recipes.
.
Try using one of my recipes (with all that stuff) and compare the taste and texture to one you've already made
using just Tritamil flour and see the difference !!

Have to agree with you Daveyboy, about the Trytamil flour. When I was first diagnosed, I made a loaf of bread with it. I ended up in tears, thinking I was going to be subjected to this awful stuff for the rest of my natural.... Don't like the taste and don't like the list of ingredients! Have to say that I find Dove's farm the easiest and tastiest ready made blend of natural gluten free flours to use.

I was going to go out and buy one of those pizza bases as I really miss having pizza but will try your receipe now as it sounds so easy!
One question - what is the receipe for the pizza sauce?? I couldnt see it on the page? Confused
