GF LEMON CHEESECAKE (WITH ACTUAL PHOTO)

INGREDIENTS:


3 X 250g packages of gf cream cheese (Delish Available Aldi or Kraft Philadelphia)
3/4 cup of caster sugar/superfine
zest and juice of 1 lemon
1 pkt of lemon zest cookies (Doves Farm)
1 tsp of vanilla essence
2 Tbls of butter
3 eggs (at room temp)


METHOD:


Crush or grind packet of cookies into crumbs
melt butter and add to crumbs, mix well
line the bottom and press into base of an 8" spring form loose base cake tin and refridgerate
(use deep sided foil dishes instead of spring form tins available almost everywhere, saves on washing up)

Empty contents of the 3 containers of the gf cream cheese into a microwave proof bowl.
heat on full power for 25 sec (to soften the cheese)

Pre-heat oven to 325F/GasMark 3

Mix with vanilla essence, sugar, lemon zest and juice until just smooth and creamy,
add eggs, mix until just blended.

Pour mix into the tin with the cooled and set crumb base.
Bake in oven for 45 mins or until centre is almost set, allow to cool.


DECORATION:

Cut 6 - 8 thinish slices of lemon
remove the pips

Place in a sauce pan with 1 cup of water and 1 - 1 1/2 cups of sugar
allow to simmer for about 20 mins

Remove and allow to cool, place around top of cheesecake

Refridgerate for at least 4 hrs (overnight is best)

Before serving scatter some flaked almonds on top
lightly dust with some light demerera sugar.

You can also make them in individual portions, use tinfoil cases (great for lunches, picnics etc)

I just noticed that i omitted the oven temp in this recipe, it has since been amended.

28 people had viewed this post and NOT ONE would send a note saying i forgot the temperature.

Do i just take it for granted that everyone is such an expert at Coeliac Gluten Free cooking
that they would automatically know.

Am i just wasting my time? I don't care what you say about me or the recipes,
But 'JUST SAY SOMETHING'

if you would prefer your comment didn't appear on the message board you
can always use PM (Private Message) which by-passes the notice board and
is sent straight to the author of a posting !

Hi Daveyboy
Really looking forward to trying this recipe as i've never actually cooked cheese-cake. I normally just usually leave mine in the fridge to set. Will let you know how it goes !!
Keep the recipes coming, I've tried some of your soup ones - ideal for this time of year.. Cool

Hi Ann Redmond, Think you will like this one,
in this lemon cheesecake the flavour is wonderful.

Rather than using a spring form tin, use a foil type pie dish,
you can get them almost anywhere,
the pound/euro stores would probably be cheapest.

if you are friendly with the bakery staff in Superquinn,
see if they would sell you some of their deep sided foil circular tray's
the ones they use for the apple or pear sponges.

(Saves on the washing up too)

I do know that they will, 'sell' you fresh yeast if you want it.

I have sent this on to my mum and she is going to bake it for me next sunday for my dessert when I visit her
