GF WF Brown Soda Bread (With Photo) |
|
Ingredients:
.
75g ground rice (Gem Pack) {in the US it's Cream of Rice}
65g ground almonds/meal
55g buckwheat flour*
30g brown rice flour (Doves Farm)
30g dried milk powder (Dawn/Cadburys Marvel)
20g potato flour/starch
25g Tapioca flour/starch
2 tsp xanthan gum
1/2 tsp salt
1/2 tsp gluten free baking powder **
1/2 tsp bread soda {in the US Baking Soda}
.
2 large egg (discard 1 yolk)
1+1/2 tsp golden syrup (Lyles) {in the US Corn Syrup}
125ml buttermilk
.
** make your own 2 parts cream of tartar to 1 part bread soda **
.
Method:
.
Sieve all the dry ingredients together 3 times in a large mixing bowl (this allows air into mix)
Mix the buttermilk with the golden syrup, stir until incorporated..
Whisk egg whites to stiff peaks , add 1 egg yolk and mix.
Add the egg mixture and buttermilk mix to dry ingredients,
Mix well using a wooden spoon
The mix should have a slightly sticky consistency
.
If too dry add a little milk (1 Tbls at a time)
If too wet add rice flour (A little at a time)
.
Preheat oven 325 F / gas mark 4
.
With floured hands, gather up in bowl and turn out onto a floured baking sheet,
tidy up into a round approx 2” high and cut a cross on top extending over the edges
.
Allow to stand for 20 mins. (this enables the starches to absorb any liquid before any heat is applied)
.
Bake in preheated oven for 25 – 30 mins or until base when tapped sounds hollow.
.
Scones:
Roll out on a floured surface to about 1” high
Using a scone cutter cut scones and place on floured baking sheet
Allow scones to stand for 10 mins.
Bake in preheated oven for 12 – 15 mins or until hollow sounding when tapped.
When completely cooled, slice with an electric kitchen knife.

After enlarging Image Left click to reduce it to a completely viewable size

Is the golden syrup neccessary as I can' t really have sugar in my diet?

Hi Lynnhopes,
I hope to rewrite the recipe during the course of the next week, replacing Teff flour for the Buckwheat etc.
.
I may be able to make it suitable by substituting Agave Nectar for any sugars.
.
So bear with me for about a week until, I run some tests on an amended recipe!

Could I just use a powdered sweetner or does it have to be a liquid. Sadly, agave nectar still raises my blood sugar

Yes, you could use Stevia powder and maybe you may need to increase buttermilk slightly??
.
Let me look at using Stevia in the reworked recipe.
.
Currently Buckwheat flour is outside the permitted limits of Contaminant even Doves Farm Brand and
no brand of potato flour as yet is certified as suitable for the GF Diet, there may however be a possibility
of one brand that the CSI are checking into.

why don't you try Doves Farm GF Brown Bread Mix for this recipe.
I would think that you would find it difficult to get Stevia in Ireland, but please correct me if I am wrong and you know a source. I have been given a jar recently and find it great.
Another natural sugar alternative that is (in my view) better than the artificacial ones is Fructose (Frusiana) or Xylitol (Zylosweet) both gf but not sure whether they are in the book (so please investigate for yourself). Both can be safely used by diabetics. Haven't baked with Xylitol yet but fructose does work albeit that you need to reduce the oven temperature.
