GF WF POTATO AND POLENTA BREAD. (with photo)

Ingredients:
300g of cold mashed potato (no butter or milk added)
1 sachet of dried yeast.
½ cup of milk at room temp..
50g of melted butter.
1 egg lightly beaten.
1 tsp of salt.
50g of fine/medium Polenta.
20g of dry milk powder (Dawn)
¼ tsp of ground white pepper
220g of Flour Mix * or GF Plain flour

Flour Mix: *
100g of rice flour (Doves Farm)......................or.............................. (Doves Farm GF plain flour will work but will not)
30g of Tapioca flour/starch (Allergycare)..........................................(give the same texture to the finished bread)
50g of ground almonds.
20g of Ground rice (Gem Pack)
20g of Corn flour/starch (Gem Pack) * (B & P no longer considered GF due to cross-contamination)


Method:
In a Pyrex bowl dissolve the yeast in the milk (room temp), leave in a warm place for 10mins.

Mix together the cold mashed potato and yeast mix, add the melted butter, salt, pepper, Polenta
and about 200g of the flour mix / plain flour, bring together using your hands into a soft dough.
.
Turn the dough out onto a lightly floured surface, knead for 10mins, adding extra flour if needed.
Press with your finger to test, it should spring back and not leave an indent.
.
Place dough in a large lightly oiled bowl and cover with a damp tea towel and stand
in a warm place for 60mins it should have doubled in size.
.
Turn out onto lightly floured surface, punch down the dough and knead for a further 5 mins.
.
Oil the inside of a silicone loaf tin 2 ½ lbs, place dough in tin and allow to stand for 30mins.
.
Pre-heat the oven to 350F/GasMark 4.
.
Glaze the top with milk and sprinkle with some Polenta.
Bake for 35 – 40 mins until top is golden and base sounds hollow when tapped.

Cool completely on a rack before cutting.

Hi David,
Those wraps and the bread both look gorgeous, fair play to you! Can I ask which polenta you use? I used to use the merchant gourmet one but now that its not considered safe I'm at a loss to find a replacement! I really miss it so it would be fantastic if you had an alternative?

Hi Treena,
You won't believe this but when I made this, I had just finished the bag and recycled it.
I'm not sure of the name it could have been 'Rainbow Wholefoods' but I couldn't swear to it.
.
I used to make up polenta (long and tedious) put it into cling film and roll it up, cool it and slice it,
then wrap individual slices and freeze, thaw and fry in a hot pan that has been brushed in oil.
.
Some mixed salad, fried polenta and drizzled in Balsamic vinegar. YUM!

Hi again Treena,
I was at Dublin Food Co-op today and I bought some more polenta
'Biona' brand and according to their website ther is no allergens (ie. GF)
.
also saw 'Sunita' brand ready to eat (ie. no stirring the pot for 45mins) and again the site said GF.
.
Just thought you'd like to know.
