INSTANT CHOCOLATE CAKE (Almost) |

Microwave Dumpling Cake in less than 5 mins
(adapted from a recipe on Celiac.com)
DRY INGRDIENTS:
Chocolate Version:
2 Tbls rice flour (Doves Farm)
1 Tbls tapioca flour/starch (Allergycare)
1 Tbls of ground almonds
1/4 tsp. xanthan gum
4 Tbls caster/superfine sugar
2 Tbls GF Cocoa
2 Tbls chocolate chips (optional)

WET INGREDIENTS:
1 egg
3 Tbls of milk (warm)
3 Tbls of Vegetable oil
½ tsp of vanilla essence
Add dry ingredients together in a bowl, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Transfer mixture into a large mug.
Microwave for 3 minutes on full power.
The Dumpling will rise over the top of the mug, don't panic!
It will shrink as it cools
Allow to cool a little, and tip out onto a plate if desired. Enjoy!

For a Lemon version:
Instead of the Cocoa and Chocolate chips use
1 Tbls of Grated Lemon Rind
2 tsp of Lemon juice.
