GF WF DF ALMOND, COCONUT AND CHERRY COOKIES |

GF Almond, Coconut and Cherry Cookies
Dry Ingredients:
.
100g of shredded coconut
100g of ground almonds
65g of Caster Sugar/Superfine
3 Tbls of Cornflour/starch *
Pinch of Salt
¼ tsp of Ground Nutmeg (Goodalls)
* B&P no longer considered GF due to Cross-Contamination.

Wet Ingredients:
.
2 egg whites
½ tsp of Almond essence
.
6 Glace Cherries (chopped finely)
.
.
Method:
Pre-heat oven to 350F/GasMark4
.
Line a baking tray with baking paper or Non stick sheet.
.
In a medium bowl, using a hand held electric mixer, beat egg whites and salt until they form soft peaks
Sprinkle in the sugar and continue to beat until Stiff peaks are formed,
stir in Almond essence.
.
Using a wooden spoon stir in half the coconut and almond, add nutmeg and mix thoroughly
add balance of coconut and almonds and mix, finally mix in chopped cherries evenly.
.
Using a soup spoon overfill slightly and ease out with a blunt knife onto lined baking tray,
leave 1 – 2 “ gap all round
Continue until all the mix is used (should yield 12 – 15 cookies)

Press out slightly with the prongs of a fork.
.
Bake for 15 -17 mins until slightly golden.

Cool on a wire rack.

After enlarging Image Left click to reduce it to a completely viewable size
