GF WF Brown Sandwich Bread

GF WF Brown Sandwich Bread

Dry Ingredients:

220g of rice flour (Doves Farm)
70g of GF Cornflour/starch
60g of tapioca starch (Allergycare)
55g of ground or milled flax seed (Linwoods)
50g of dry milk powder (Dawn/Marvel etc)
2 tsp of xanthan gum
2 tsp of Ground Psyllium
1 tsp of salt
¼ tsp of ground white pepper


Wet Ingredients:

Yeast:

1 cup of warm water
1 sachet of instant yeast
2 Tbls of sugar

3 Tbls of vegetable oil
2 full eggs + 2 egg whites
2 tsp of lemon juice

Method:

Pre-Heat oven to 180F/GasMark2

Combine warm water, yeast and sugar in a bowl and allow to become frothy in a warm place (10 mins)


Add the dry ingredients to a mixer bowl fitted with the dough hook and mix on a slow speed until fully incorporated, scrape down sides as necessary

Add wet ingredients and allow to mix on medium speed for about 3 mins scraping down the side of the bowl when necessary.

Using a wet spatula release the dough from the sides of the mixing bowl until it's almost free moving.

Prepare a loaf tin (grease and dust with rice flour)

Turn Off oven:

Transfer dough into the prepared tin and place in oven and allow to prove for about 40 mins.

Set temp to 350F/GasMark 4 and bake for 40-45 mins
.
Turn out of the tin and return to oven for 5 mins to dry and crisp underside.

Remove from oven and allow to cool completely before slicing.

Can you tell me what Ground Psyllium is tho? (excuse my ignorance Embarassed )

It's Soluble fibre, the type your body likes and can be purchased in a Health Food Shop. (It can be omitted)

Just to highlight the following for the sensitive Coeliacs:

Please note: Doves Farm Naturally Gluten Free Flours e.g. Rice Flour, Gram Flour, Buckwheat Flour currently DO NOT comply with<20ppm.

As noted in the Coeliac Online News for October 2009.

maybe I should have added a note to say that the Rice flour etc that was GF last year has not changed,
but the new level of determining GF has,
It has reduced from <200PPM down to <20PPM.
.
If you were ok eating it last year, continue to do so this year
it's NOT the product that has changed just the criteria.

Yes, criteria has changed - we are down from 200ppm to 20ppm but Doves Farm do definitely state that currently their rice flour does not make this new safe level.
So we cannot recommend using the flour. Actually the codex level for naturally gluten free flours has been <20ppm for some years now, long before the adoption of this new legislation.

(We are trying to find sources of rice flour and some of the other naturally gluten free flours at the <20ppm level especially for gluten free bakeries around the country - we will post on website if we have any success here).
