Eating Out Pledge
About one in a hundred people in Ireland have coeliac disease. Eating away from home is perhaps the biggest challenge facing people with coeliac disease today. Increasingly, in every aspect of life, people eat and drink on the go. People with coeliac disease are only too aware of the health risks involved with eating food containing traces of gluten.
What Is The Pledge
The Eating Out Pledge is a combination of an on-line Gluten Free Training programme provided by Coeliac Society of Ireland, and a Declaration of gluten free standards, signed by the business. When the training has been completed by the minimum people required and the signed declaration returned, the Coeliac Society of Ireland register the business and issue the Eating Out Pledge certificate and window sticker.
Aim
The aim for the Coeliac Society of Ireland’s Eating Out Pledge is to ensure that gluten free food is stored, prepared, cooked and served in a manner which offers confidence to both the consumer and the operator.

PLEDGE CRITERIA

Training
The aim of the programme is that all staff involved in the preparation and serving of food should complete the on-line Gluten free training. The minimum requirement is that the Owner /Manager and Head Chef will have undertaken the training, and that at least one trained person is present in each operational centre* at all times.
* An operational centre is defined as a location where storing, preparation, cooking/baking, handling and /or serving food takes place.
Declaration Form
Upon registration you will receive documentation to complete. One of these is a declaration form. The declaration form must be completed and returned to the Coeliac Society of Ireland. The form includes the details of personnel nominated for training, and the Kitchen Safety Checklist. Your venue(s) must meet all conditions specified in the Kitchen Safety Checklist. The Declaration form must be signed by the owner/manager of the business.
Fee
As an introductory offer, a flat rate fee of €175 is charged for 2019.
Spot Checks
The Coeliac Society of Ireland will undertake random spot checks of businesses who are registered for the Pledge.

Coeliac Ireland’s online catering training course teaches everything needed to prepare and deliver safe gluten free food for people with coeliac disease within the boundaries of the law. Furthermore, it will provide an understanding of coeliac disease, how it effects people as well as information on the growing gluten free market and how to access it.
After completion of the course, there is a short multiple choice question assessment. On passing this assessment, you will receive a training certificate from the Coeliac Society of Ireland

The effects of eating gluten varies from person to person and may last from a few hours to a few days. This online course will teach more about coeliac disease and you will be able to hear directly from people who have the condition.
Coeliac disease is an autoimmune disease, which means that the body produces antibodies that attack its own tissues. This disease is triggered by gluten, a protein found in wheat, barley and rye. Some people with coeliac disease are also sensitive to oats. Dermatitis herpetiformis is a skin rash found amongst some people who have coeliac disease. Coeliac disease is not the same as an allergy to wheat. This online course will equip you with the knowledge you require in order to understand coeliac disease and the needs of those with the condition.
