She lives in Dungarvan, Co. Waterford, where she set up her gourmet catering company in 2001. Her zealous commitment to using locally sourced, fresh seasonal produce, infused with creativity and flair, has garnered Eunice a reputation for being one of the best in the business.

With a wealth of knowledge and industry experience in the Food and Education sectors, her advice and problem-solving skills are very much based on regular everyday food service and hospitality queries and dilemmas.

Alfonso Rodriguez-Herrera is a medical consultant in paediatrics with special interest in paediatric gastroenterology and nutrition. He gained his PhD from the University of Seville (Spain) with a thesis on coeliac disease. He is full member of ESPGHAN (European Society for Paediatric Gastroenterology, Hepatology and Nutrition)and member of its Coeliac Disease Special Interest Group. His main research topics are biomarkers of dietary compliance (allergy, coeliac disease and obesity). He is one of the co-authors of the patent P201400569 for gluten free diet monitoring.
Sarah Keogh is the founder of Eatwell and has over 20 years’ experience working in nutrition and dietetics. Sarah has a degree in Human Nutrition and Dietetics from Trinity College, Dublin and a Masters in European Food Regulation. Sarah works with food companies on food legislation and product development as well as delivering workplace wellness sessions and nutrition courses. Sarah is an outstanding speaker on nutrition whether she is delivering a nutrition session or speaking on radio & television.
Frances Buckley MSc is an Applied Culinary Nutritionist and Chef with over 26 years of professional cooking experience in restaurants and diplomat catering.
Frances is a classically trained chef, having trained in Dublin College of Catering, Cathal Brugha Street. With over 5 years’ experience working in the area of sensory food science evaluation, with Teagasc and Diageo as part of their food sensory testing panels.
Sheena Mitchell MPSI
Set up Wondercare.ie, a parenting healthcare resource, was initially launched in 2015 while Sheena was on maternity leave and realized there was a huge amount of misleading and inaccurate parenting advice being disseminated online. Over the years, and often late at night, Sheena has answered thousands of online queries from vulnerable parents across the country who need quick, convenient, and confidential access to support.
Wondercare.ie offers more than 150 evidence-based articles and confidential 1-on-1 online advice service with Pharmacist Sheena Mitchell, she will share her journey with her daughter that has coeliac disease
