Cous Cous with Spiced Aubergine and Feta
Gluten free cous cous is a delicious carrier of flavour, be sure to season the boiling water with gf stock cube or spices of your choice.
You can also buy one that is ready to add boiling water with the seasonings already added.
Ingredients
- 2 large aubergines(cut into chunks, and sprinkled with salt)
- 1 tablespoon of extra virgin olive oil.
- 250g of gluten free cous cous
- 1 medium onion chopped.
- 2 cloves of garlic peeled and chopped.
- ¼ teaspoon of ground turmeric
- ¼ teaspoon of Za’atar (or smoked paprika)
- 1 teaspoon of chopped fresh ginger.
- 40g of dried apricots
- 60g of feta cheese
- Handful of chopped hazelnuts(optional)
Method
1. Put the diced aubergine aubergines into a colander and allow any liquid to drain off (30 mins)
2. In a bowl toss the aubergine with olive oil, garlic, spices, and fresh ginger, leave for 10 minutes to absorb flavours.
3. In a non-stick pan heat olive oil and cook the onions, add the aubergines, and toss in the pan for 10 minutes on medium heat.
4. Pour boiling water over the cous cous in a bowl cover and allow to sit for five minutes, stir through with a fork.
5. Serve the cous cous topped with aubergine and sprinkled with feta cheese.
