Lemon and Amaretti Parfait

Ingredients

  • ½ pt./250ml cream
  • 14 Fl oz of sweetened condensed milk ( 1 tin Carnation) Juice of 1 and half  lemons
  • 1 pack of gluten free biscotti amaretti (amaretti biscuits) Zest of 1 lemon.

Method

  1. Line the inside of a 2Lb loaf tin with cling film making sure to push down to the bottom of the tin and overlap over outer side of the
  2. In a large bowl, mix the cream, condensed milk, lemon juice and zest. Cover the bottom of the lined loaf tin with the biscuits and layer on some of the lemon cream mixture. Layer the biscuits and cream in alternate layers, finishing with the cream on
  3. Cover over with the cling
  4. Place on an even surface in the freezer overnight, before serving remove it from the freezer one hour before and slice. This is delicious served with Berry
