Sable pastry for mince pies

Theis is a luxury buttery pastry ideal for mince pies or tarts Tip: with this pastry roll it while cold and it is a good idea to roll between two sheets of baking parchment or cling film.

Ingredients

  • 200g of gluten free plain flour
  • 50g of Dunnes ground almonds
  • 200g Dunnes butter
  • 100g of icing sugar
  • 2 egg yolks

Method

  1. In a large mixing bowl sieve, the flour and icing sugar
  2. Rub in the butter
  3. Add the egg yolks to form a dough.
  4. (If this is a little dry add a small amount of cold water)
  5. Wrap the dough in greaseproof paper and refrigerate for a minimum of 2 hours before using
  6. This dough can be made in advance and frozen
